Coconut Sweet Potato

Ingredients
  • 2 sweetpotato, 5” long
    Sweet Potatoes
  • 1/3 cup
    Coconut Milk, Canned, Low Fat
  • 1 pomegranate (4” dia)
    Pomegranates, seeded
  • 1/8 tsp
    Sea Salt
  • 1 tbsp
    Cilantro
Directions

Wash sweet potatoes. Puncture a few times with a fork. Cook on high for 6-8 minutes, turning the potatoes over halfway through.

Cut open potato on top side. Top with coconut milk, coconut flakes (optional), and pomegranate seeds. Season with salt and cilantro if desired. Enjoy.

Alternately you can mash the potatoes with all the ingredients to form a delicious mashed potato.
