Asian Tofu Lettuce Cups

  • 4 cup
    Medium-Grain White Rice
  • 3 cup
  • 1 tsp
    Ginger Root, Peeled and minced
  • 3 tbsp
    Maple Syrup
  • 3 tbsp
  • 1 tablespoon
    Sesame Oil
  • 1 1/2 tbsp
    Chili Garlic Sauce
  • 3 tbsp
  • 3 oz
    Rice Wine
  • 1 tbsp
    Coconut Oil
  • 8 cup shredded
    Romaine Lettuce, Romaine leaves
  • 2 cup chopped
    Carrots, peeled and grated
  • 8 waterchestnuts
    Water Chestnuts, Canned, 8 oz can drained and diced
  • 1 tbsp
    Mint Leaves, Chopped
  • 2 tbsp
    Cilantro, Chopped
  • 3 medium (4-1/8” long)
    Green Onion, White and light green parts only

Rinse tofu and drain to release excess water. Dice into small cubes, and set aside. In a large, dry cast iron skillet over medium heat, toast white rice for 2 minutes or until brown. Transfer to a spice grinder, mortar and pestle, or food processor. Grind into salt, and set aside. In a small bowl, combine, garlic, ginger, maple syrup, wheat free tamari, toasted sesame oil, chile garlic sauce, water, and rice wine. Set aside. In the same skillet over medium heat, heat coconut oil. Add the tofu, and cook, stirring often, for 5 to 7 minutes or until lightly browned. Pour in sauce, reduce heat to low, and simmer for 10 minute. Place romaine leaves on a flat surface. Divide 1/4 cup tofu mixture among the leaves, and top each with 1/8 cup carrots, 1 tsp water chestnuts, 1 tsp mint leaves, 2 tsp cilantro, and 2 tsp green onions. Finish with 1 1/2 tbsp of ground rice flour, roll tightly, cut in half and serve.
